maybe it’d be better
not to try to recreate
but make anew
it's never the fanciest or the most expensive meals that are memorable to me. it's the simple, done right. like the santarpio's pizza and the home fries at kelly's.

one day i inadvertently placed my phone on the table
with the camera on
facing the ceiling
and what was in the viewfinder
was something interesting
something i ordinarily wouldn't have noticed
so i decided to take a 15 second video of the ceiling
capturing the sounds of the restaurant in the process
now one of the first things i do
when i sit down at a restaurant
is look up
restaurant ceilings and sounds
she was first brought to my attention by apple music's suggested personal playlist based on my listening habits.
it was the track passionfruit- a remake of drake's by the same name.
there were other remakes of my favorite track from drake's more life album but this one definitely stood out.

not much is known about this rapper, songwriter and producer.
here are just a few things i found on wikipedia:
1. he was born in portland, oregon
2. first began rapping in 4th grade

4. he was working as an exterminator for Terminex in virginia while competing on BET's 106 & Park Freestyle Friday's
5. he would do the 7 hour drive from virginia to nyc every week to participate in the competition
6. he has twin daughters
7. he enrolled in virginia commonwealth university, there is no mention of him graduating
8. he was rumored to have been a ghostwriter for drake
9. he has collaborated with drake

i got up
i was craving mcdonald’s and decide to try their new fresh beef quarter pounder.
i get one. dressed like a big mac (with lettuce and big mac sauce).
the meat is noticeably juicier and because the meat is grilled to order, it’s much warmer. the warmer patty also melts the cheese in a way the other mcdonald's burgers are unable to do.
the taste of the patty is not noticeably different- it's pretty tasteless as it always was.
obviously this doesn’t compete with the new generation of fast casual burgers like shake shack, five guys...etc but mcdonald’s is just sometimes easier, faster, cheaper and more widely available.
fast food has really come full circle. people want things made the old fashioned way.
mcdonald's didn't always start out serving frozen burgers.
if it were up to the orginal founders, Richard and Maurice McDonald, they would have never compromised quality over expansion.
as portrayed in the movie the founder starring michael keaton as Ray Kroc, he was unstoppable. he sacrificed quality to reduce costs and to his credit, mcdonald's is the global empire it is today.
however, times have changed. people are more aware of how food affects their bodies. they are looking for healthier options.
no longer are we looking for a fast and cheap solution to satisfy our hunger. we are looking for quality food and are willing to pay a little extra.
once a pioneer in the industry, mcdonald’s is having to adapt to current changes. in so doing, they are returning to a time when their ingredients were fresh, not frozen.
Juste, as in, just in French.
And Tutu is her nickname, short for Tuyen.
Tuyen is French. Tuyen is Vietnamese.
Most importantly, she is to the point and direct. No time to waste when you have big dreams like the ones she has, to incorporate all her passions to share with the world.
It’s two days before Tuyen’s banh mi pop up. She’s in high gear getting the last details in order. Every minute is precious. So it didn’t help that she misplaced her key to the shed where her scooter is kept, her preferred means of transportation. In the end, we decide to do the interview over the phone but not before exhausting all other options to meet in person. It’s just not in her nature to give up when faced with a challenge.
She was a corporate event planner and time crunch is nothing new. She has planned events for hundreds of thousands of guests all around the world. And having planned her own wedding two years ago, planning an event is second nature for Tuyen.
However this is her first, very own, food event.
Much like her wedding, this event is a celebration. A celebration of Tuyen’s evolution with food, design, marketing, technology and most importantly- with people. She hopes to make new connections with people who she will meet for the first time and looks forward to seeing her friends and family, some of whom will be traveling from numerous countries to take part.
She doesn’t know where this will lead and she is open to seeing where this will take her. Tuyen has embraced this uncertainty as an outlier; she has long accepted that she doesn’t fit into a box and that she must remain open to new experiences that are unconventional.
Tuyen was born in Toulouse France and raised in the Surburbs of Paris, near Versailles. She moved to the States 4 years ago. She continues to travel back and forth from France and to other foreign destinations.
She will be traveling to Morocco this summer.
She is currently an adjunct instructor in graphic design at UMass Lowell.
She lives in Arlington with her husband and her two step children.
Leave your kids at home. This is a 21 and over event. The venue is a bar.
She will be serving banh mi with two accompaniments.

I decide to take a walk after lunch but don’t get far before I walk to the nearest coffee shop
the weather has become too hot too fast
I see Kyoto cold brew on the menu
I ask what it is
it’s a slow-drip iced coffee
16 hour slow
it’s less acidic and smoother than their regular cold brew
it’s almost double the price
the apparatus it is brewed in
looks more like an oversized hour glass than a coffee brewer
really enjoyed it
it had a nice caramel flavor
as I wait for my coffee, I hear a tune I’d expect a trendy café to play and shazam the song. too my surpise it is jaden smith
I recently watched his video for icon- which I really really liked
